Happy Summer! How are you feeling about having the sun out everyday? For me that’s just perfect. It feels like I’ve been spending way too much time outside in the garden enjoying drinks and going through my favourite fashion magazines. I also LOVE having friends over and enjoying drinks that I’ve specifically prepared for us. If you’re after some amazing cocktail recipes that are easy to make and delicious, keep on reading because I’m sharing two summer cocktails that you have to try this summer!

Espresso Martini
One of my favourite cocktails is Espresso Martini! I prefer making my own Espresso Martini as the cocktail needs to have the right balance of freshly brewed coffee, vodka and Bailey’s. Serve at brunch or early afternoon and expect your guests to be impressed.
The Recipe
- 25ml. Absolut Vodka
- 25ml. Baileys® Coffee Irish Cream Liqueur
- 25ml. Espresso
- 10ml. Honey
- 3 Coffee Beans
Preparation Time: 10 min
Preparation
- Add ice to your shaker
2. Add vodka, Bailey’s, coffee and honey
In a jigger, measure 25ml Vodka, 25ml Bailey’s, 25ml Coffee and 10 ml Honey and add them over the ice. Let the fun begin and start shaking.
3. Strain the cocktail into your Martini glass
Strain the drink into a Martini glass.
4. Garnish with coffee beans
We’re ready! Just add 3 coffee beans on top of your drink and voila. You’ve just created the perfect cocktail for your summer gathering.
Food to pair with Espresso Martini: parmesan cheese & cured meats or infused espresso truffles or chocolate.
Piña Colada
If you’re a fan of refreshing, really full on flavour drinks, then this Piña Colada will be just the perfect drink to refresh your summer days. You can serve this drink at any point of the day, however I would see this drink during lunch or early afternoon.
The Recipe
- 120 ml Pineapple juice
- 60 ml Captain Morgan White Rum
- 60 ml Coconut Cream
- Pineapple Slice to garnish
Preparation Time: 5-10 minutes
Preparation
- Add ice to your shaker
Choose three or four ice cubes and add them to your shaker.
2. Add the Pineapple Juice, White Rum and Coconut Cream
Measure the ingredients in a jigger and add them to your shaker. Start shaking them together!
3. Strain the drink into a Pina Colada glass
Strain your freshly made yummy cocktail into a Pina Colada Glass.
4. Garnish with a pineapple slice and umbrella
Garnish with a fresh pineapple slice and a cute umbrella. A cocktail is never really ready without the wow factor, so please go the extra mile for making it look awesome!
